dozen snails (vaquetes)
red beans, without pod
tabella beans, without pod
clove of garlic, peeled and chopped
ripped peeled tomato
thread saffron, salt, rosemary (optional)
1 · Cut the chicken and the rabbit in 8 regular pieces, salt them, and heat the oil in a pan where the chicken and the rabbit pieces will be slowly almost fried.
2 · Once the meat is almost fried, put the vegetables and do the same.
3 · Later, add garlic, tomato and paprika.
4 · Then fill the pan with the 2 liters of water and the snails. Let them simmer more or less 10 minutes.
5 · Now, put the thread saffron and spread rice across the surface of the pan< cook it in a very high fire during 8 minutes.
6 · Then, reduce fire in order to boil in a slow fire 10 minutes more, (it will get a "socarrat" rice).
